Pineapple Cucumber Ginger Smoothie Recipe

• 2 cups chopped pineapple, fresh or frozen
• 1 – 1 1/2 cups peeled and chopped cucumber
• 1 -2 frozen banana
• 1/2 cup mint leaves
• 2 handfuls of spinach, romaine, kale or chard leaves
• 1 – 1.5 cups coconut water
• 1 inch ginger – peeled

Blend all ingredients in blender until smooth. Pour into a nice glass and enjoy!

      Great smoothie for kids. Most all of my recipes are kid approved by my two-year-old son, Turner, and smoothies are always a big hit around here ;-)
