Raw Bell Pepper Cashew Cheese Pate Recipe

This is one of my favorite recipes and it is a staple at any get-together or party I have at my home. If you’re a snacky, dippy lover like me, this recipe is perfect for you! Keep this in your fridge to have on hand as a veggie/cracker/chip dip, sandwich/tortilla spread, or sauce and you’ll wonder why you ever bothered to buy store-made dips. Bell Pepper Cashew Cheese Pate

1 1/4 cups soaked cashews (soaked in purified water for 6-8 hours)
1 cup diced bell pepper (red, orange or yellow)
2 1/2 tablespoons lime juice
1/4 teaspoon chopped garlic
3/4 teaspoon salt
Place all ingredients into a food processor and puree into a smooth pate.

    your recipe says 1 1/4 cups soaked cashews and in your video you say 2 cups….which one is it?

      Natalie – Thank you so much for bringing this to my attention. I often shoot my videos based off on memorization, so I made a mistake in this one, and you’re the first to let me know :-) But, the correct amount of cashews is 1 1/4 cups. Enjoy!
